Coffee Roaster Inventory Management: From Green Bean to Retail Shelf
Coffee roasters manage three distinct inventories: green beans (raw), roasted coffee (finished), and packaging/retail (supporting). Each stage has unique loss vectors. Moisture loss from green beans, roast yield variance, and packaging misalignment are the three most expensive and most preventable.
Stage 1: Green Bean Inventory
Weigh every bag on delivery. Record origin, variety, processing method, and moisture content if available. Weigh the same bags monthly. Green beans absorb humidity — a 25 kg bag can gain 1.5 to 2% in humid storage. That is 375 to 500g of water weight you paid for as coffee.
Monthly Moisture Check Formula:
Moisture Gain % = (Current Weight - Delivery Weight) / Delivery Weight x 100
Target: under 1%. Over 3% means your storage conditions need improvement. Breathable grain bags at 60°F and 60% relative humidity.
Stage 2: Roast Yield Tracking
Roast Yield % = (Roasted Output / Green Input) x 100
Benchmarks by roast level: Light roast 85-88%, Medium roast 82-85%, Dark roast 78-82%, Espresso blend 80-83%. Deviations over 2% from your target indicate roaster calibration issues or green bean moisture problems.
